Broccoli Casserole
Easy, inexpensive, and filling meal or side dish.

Serves: 6

1 med. onion - chopped
1/4 cup butter OR margarine
1 lb. fresh OR frozen broccoli florets - cooked until tender
(2) 10.75 oz. cans condensed cream of mushroom soup - low-fat okay
1/4 - 1/2 cup shredded cheddar cheese - low-fat okay

-In a small skillet over medium heat, sauté onions in butter until translucent,  for 4 minutes.
-Combine all ingredients in a 2-quart oven-proof casserole dish.
-Bake, uncovered, in a 350 degree oven for 30 minutes.

Notes: I've substituted cream of celery and cream of onion for one of the cans of cream of mushroom soup with very good results.

Make It A Meal: Serve with Baked Basil Chicken

  • This is a great meal. My daughter likes it more than anything else I make. I put some grated parmesan in because I didn't have the other cheese.

  • We love this recipe. We eat it once a week. I sometimes add mushrooms to it. I sometimes add diced leftover chicken to it.

  • I don't know if I told you before, but I make this recipe twice a month and its a big hit every time.

  • Top with canned french fried onions. YUM!

  • The sauteed onions make a addition to this dish. I think they would also improve other casserole type side dishes!

  • We love this recipe. We omit the cheese and add two soaked shitake mushrooms.

  • I like to add Minute rice to this recipe before putting it in the oven. It really stretches it out and my family LOVES it!.
